Jenna & Sally’s Cookies
When I was at high school, a girlfriend of mine used to run a black market cookie dough operation out of her locker. She made quite a lot of money, mainly because her overheads were zero (her mum paid for the ingredients) and demand was high. She sold the cookie dough in little bags for about $1.00 per bag. There wasn’t much there, but God it was good. Around the same time, I also got a bit chubby. I don’t think it was a coincidence.
I’m not much of a baker; I never have been because I’m too arrogant and lazy to follow instructions properly. But having spent an afternoon baking cookies, having the smell of chocolate and butter wafting through my house, I’ve changed my mind. Cookies are also the ideal way to make people like you.
Here are two recipes, one from Jenna Brown, the black market cookie cartel girl herself and one from Sally Jackways, courtesy of her daughter Francie Jackways.
Jenna Brown’s Cookies
Ingredients
125 grams butter (softened)
½ cup white sugar
¼ packed down cup brown sugar
1 egg
1-teaspoon vanilla extract/essence
1-cup flour
1-teaspoon baking soda
1-teaspoon salt
1 cup chocolate chips
Method
1. Mix the butter and sugar together in a food processer until light coloured and creamy.
2. Add the egg, vanilla essence and beat well.
3. Sift in the flour, baking soda and salt and mix together well.
4. Fold through the chocolate chips.
5. Roll together a heaped tablespoon size piece of cookie dough together in your hands to make a small ball. Place on a baking tray lined with baking paper and flatten with the back of a fork. Repeat until all the mixture is gone.
6. Bake in an 180C oven for 15 – 20 minutes until golden.
7. Allow to cool on a baking rack.

Sally Jackway’s Chocolate Chip Biscuits.
Ingredients
125g softened butter
¼ cup white sugar
3 tablespoons condensed milk
2 drops vanilla extract/essence
1-½ cups flour
1-teaspoon baking powder
1 cup chocolate chips
Method
1. Cream the butter, sugar, condensed milk and vanilla essence until smooth and light.
2. Sift the flour and baking powder and add to the butter mix together with the chocolate.
3. Mix well.
4. Roll together a heaped tablespoon size piece of cookie dough together in your hands to make a small ball. Place on a baking tray lined with baking paper and flatten with the back of a fork. Repeat until all the mixture is gone.
5. Bake in an 180C oven for 15 – 20 minutes until golden.
6. Allow to cool on a baking rack.
Notes:
1. As suggested above, you can totally just eat the cookie dough. It is unreal.
2. Leave quite a bit of space between each cookie as they spread quite a lot when cooking.
3. Check them a few times, better to undercook than overcook (if the dough is anything to go by).
