“I don’t cook food, I will it.”
Charlie Sheen’s mock cooking show, Winning Recipes, confirms a couple of things that we probably knew already: (a) Sheen is utterly mental in the head department and (b) despite Sheen, there are some winning recipes that really do stand the test of time. Marcella Hazan’s classic tomato sauce is one such winner. So simple (3 ingredients), yet utterly divine. After cooking it for the first time you’ll never be able to look another sugo in the face again.
Sugo con pomodori e burro

2 cans of tinned tomatoes
1 onion, cut in half
5 tablespoons of really good unsalted butter
Place the tinned tomatoes in a heavy based saucepan and mash them with a fork or the sharp end of the can. Plop the halved onion and the butter in the pan, mix it around a bit and bring the mixture to the boil. Reduce heat to a slow simmer and cook for 45 minutes. Remove the onion from the sauce and serve immediately over al dente spaghetti with loads of parmesan and a big, fat glass of nebbiolo. As Sheen would say, “tastes like winning”.
